From the oil mill of the Brisighellese Agricultural Cooperative comes 90% of the local production of Protected Designation of Origin (PDO) oil, which can be classified into: Brisighella extra virgin olive oil with a green-yellow color, a flowery fragrance and a strong flavor and in Olio Brisighello, a local variety with a green color, has a broad, continuous fragrance and an almondy flavor that goes beautifully with fish dishes.
