Passatelli is a typical type of egg pasta, which is characterized by its elongated and irregular shape. Shallot and cherry tomato sauce is a light and flavorful condiment that enhances the taste of passatelli.<\/p>\n<p data-sourcepos=\"7:1-7:15\"><strong>Ingredients<\/strong><\/p>\n<ul data-sourcepos=\"9:1-21:0\">\n<li data-sourcepos=\"9:1-15:32\">For the passatelli:\n<ul data-sourcepos=\"10:5-15:32\">\n<li data-sourcepos=\"10:5-10:31\">300 g of breadcrumbs<\/li>\n<li data-sourcepos=\"11:5-11:46\">300 g of grated Parmesan cheese<\/li>\n<li data-sourcepos=\"13:5-13:12\">6-7 eggs<\/li>\n<li data-sourcepos=\"14:5-14:24\">A pinch of salt<\/li>\n<li data-sourcepos=\"15:5-15:32\">A pinch of nutmeg<\/li>\n<\/ul>\n<\/li>\n<li data-sourcepos=\"16:1-21:0\">For the sauce:\n<ul data-sourcepos=\"17:5-21:0\">\n<li data-sourcepos=\"17:5-17:16\">2 shallots<\/li>\n<li data-sourcepos=\"18:5-18:33\">400 g of cherry tomatoes<\/li>\n<li data-sourcepos=\"19:5-19:32\">Extra virgin olive oil<\/li>\n<li data-sourcepos=\"20:5-21:0\">Salt and pepper<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p data-sourcepos=\"22:1-22:16\"><strong>Proceedings<\/strong><\/p>\n<p data-sourcepos=\"24:1-24:21\"><strong>For the passatelli:<\/strong><\/p>\n<ol data-sourcepos=\"26:1-28:0\">\n<li data-sourcepos=\"26:1-26:169\">Stir in breadcrumbs, Parmesan cheese, eggs, salt and nutmeg. Knead until the mixture is smooth.<\/li>\n<li data-sourcepos=\"27:1-28:0\">Form the passatelli with the passatelli mold<\/li>\n<\/ol>\n<p data-sourcepos=\"29:1-29:16\"><strong>For the sauce:<\/strong><\/p>\n<ol data-sourcepos=\"31:1-33:0\">\n<li data-sourcepos=\"31:1-31:98\">Chop the shallots and wilt them in a pan with a drizzle of extra virgin olive oil.<\/li>\n<li data-sourcepos=\"32:1-33:0\">Add the cherry tomatoes, season with salt and pepper.
